Hyper-Sampling

I believe the best way to record these devices is using a technique known as 'hyper-sampling'. This is a process created by software manufacturers 'Propellerhead' in Sweden. It requires using multiple microphones, velocities and variations to record each note/sound of an instrument in order to produce a detailed virtual device known as a 'Refill', which can then be used in conjuction with their flagship software studio 'Reason 3'.

Propellerheads recently released a new refill containing a collection of highly realistic virtual pianos aptly called 'Reason Pianos'. A feature on their website explains how this refill was made, I believe I can apply the same techniques in order to develop my instruments.
